In this book, Antognini does an excellent job at just that.
He is the first person to truly help me understand the difference between table stats and system stats and how they bias the optimizer.
He explains everything in a highly readable and intelligible manner.

If you want a really good book about performance, this is for you! This is my personal opinion, of course, but I'm sure that this book will surprise everyone!
